What materials did you use… 8.27 million won ice cream ‘Guinness World Record’

White truffle ice cream developed by a Japanese company has set a Guinness World Record as the most expensive ice cream in the world. It costs 873,400 yen (about 8.27 million won) for 130 ml.

The name of this ice cream released by the high-end ice cream brand ‘Cellato’ is ‘Byakuya’. It means white night in Japanese.

In addition to two types of cheese, white truffles with a unique aroma are generously added to create a rich and luxurious taste. Only the finest white truffles from Italy, which are priced at 2 million yen (approximately 18.95 million won) per net, were used.

According to a Guinness World Records post, Cerato used sake lees, which is used to make sake (Japanese sake), to develop an ice cream that harmonizes European and Japanese ingredients. For full-fledged development, we even hired a chef famous for fusion cuisine.

According to the South China Morning Post (SCMP), Cerato CEO said, “It took more than a year and a half to get the taste right through a lot of trial and error. Achieving the Guinness World Record was an effort well worth it.”

As a finishing topping, white truffle and parmesan cheese were grated to express white eyes. The edible gold powder sprinkled on top is the highlight.

Cerato introduced on its official website that it goes well with alcoholic beverages such as old Japanese sake or acidic white wine, rum, or grappa.

Byakuya is sold as a set with handcrafted spoons made by artisans in Fushimi, Kyoto, and costs 880,000 yen (approximately 8,330,000 won) per set.

According to Guinness, Cerato plans to introduce more types of luxury products such as champagne and caviar in the future.
