UNESCO on Friday listed the art of cooking Ukrainian “borscht”, a type of soup, on its list of endangered cultural heritage.
“The Ukrainian culture of preparing borscht is today registered on UNESCO’s Intangible Cultural Heritage List and requires urgent conservation measures,” the organization said.
“The existence of this soup (…) is not in itself endangered, but the human and living heritage associated with borscht is at direct risk, as the ability of populations to practice, to transmit their intangible cultural heritage has been seriously disturbed by armed conflict, especially of communities. forcibly displaced”, explained Pier Luigi Petrillo, rapporteur of the evaluation committee.
Considering that the occupation of the country by Russia on February 24 and the subsequent months of bombings threatened the “viability” of the tradition, Ukraine submitted a request in April to include the culture of this soup on the list of endangered intangible cultural heritage. surrounding the dish.
Because of the war, “the population can no longer prepare or even grow the local vegetables needed,” Petrillo said.
The Ukrainian government welcomed the decision to recognize this borscht, which Russia also claims to be a national dish.
Culture Minister Oleksandr Tkachenko commented on Telegram that “the victory in the ‘borscht’ war is ours”, adding that Ukraine will “win both in the ‘borscht’ war and in this war,” referring to the Russian occupation.
“Ukraine will share the recipe for this borscht with all civilized and even non-civilized countries, so that at least we have something light, tasty and Ukrainian,” he added.
