Not quite beer, not quite wine, “life.” A hybrid born from the conjunction of wine and brewing know-how. In terms of flavour, la viere is a beer that has the recognizable characteristics of grapes or wine, without falling into lambic either, a Belgian beer fermented in wine barrels, with acid and bitter accents.
To create the wine, the grapes are destemmed and pressed before fermenting for a few days. Next, the beer must is added delicately, so as not to precipitate the working yeasts. A co-fermentation of three weeks follows. Keep in mind that life is more alcoholic than a classic beer and is around 10 °.
